Stir-Fried Snow Peas

Makes 4 to 6 servings
1 pound snow peas
1 1/2 tablespoons roasted peanut or sesame oil
1 clove garlic, chopped
Pinch of sugar
Sea salt

Rinse and trim the snow peas and drain well.

Heat a large skillet or wok. Add the oil, swirl it around, then add the garlic and snow peas. Sprinkle with the sugar and salt to taste. Stir for two minutes. If the peas begin to brown and are not cooked to your liking, add a couple tablespoons of chicken broth or water and steam-cook another minute. Serve right away.

Note: For an added explosion of flavor, sprinkle with the bottled Japanese seasoning Shischimi Togarashi, which blends hot chiles and orange peel and other ingredients.
