New bakery opens in Miami Twp.

MIAMISBURG — Boosalis Baking opened Monday, April 28, at 9486 Springboro Pike (Ohio 741), in Miami Twp., just north of Springboro.

The bakery is owned by Matthew Boosalis, who worked in corporate finance in California before moving to the Dayton area to take a job in that industry. Boosalis, an avid baker, said after noticing that very few bakeries existed in the Dayton area, he gave up his finance career about a year ago to lay the groundwork for opening his own bakery.

The timing for opening a bakery, Boosalis said, "can't be any tougher," since rising wheat prices have pinched restaurants and bakeries across the country. But he is optimistic when he sees the volume of traffic driving past his high-profile location on Ohio 741, and because several customers found his shop during Monday's "soft opening."

The bakery offers a variety of pastries and breads, made in-house. The pastries include cinnamon rolls, Danish, coffee cakes, croissants, muffins and scones; breads include a nine-grain, focaccia, raisin-walnut and bread sticks, with several more types of loaves soon to come. The bakery also offers panini-style sandwiches made with various meats and cheeses and chef's salads with house-made buttermilk-dill dressing.

The restaurant has applied for a license that will allow it to sell bottles of wine, but only "to go" — not for consumption at the restaurant.
