You know you really want to be a restaurateur when: (1) It's been your dream for a decade; (2) You take pictures of restaurants and bars wherever you travel so you can borrow design ideas; (3) Your renovation plans call for removing a 12-foot section of a load-bearing wall in a 140-year-old building; and (4) You open in the depths of winter during the restaurant industry's slowest period. It's hard to tell from the rough-sawn lumber clad building that so much color will greet you inside of Carmel's in Dayton, but when you step through the doors, it hits you — a palette of intense, blazing orange as far as the eye can see punctuated by accents of wood, bright paintings of full flowers and desert sunset scenes and an occasional beer sign. BEAVERCREEK — Usually when a restaurant proclaims it has "something for everyone," my hyperbole-detection meter starts quivering. Not at the Cheesecake Factory.
